Stir-fried Ground Pork with Pickled Takana Mustard Greens
Kyushu is famous for its production of takana mustard greens. Stir-fried ground pork with takana pickles is addictive. You'll keep going back for seconds!

Ingredients (Serves 2)
- 200 g ground pork
- 80 g pickled takana mustard greens
- 100 g boiled bamboo shoots
- 2 tbsp Japanese leek (minced)
- 1 tbsp sake
- 1 tsp soy sauce
- 1 tsp white sesame seeds
- 1 tbsp vegetable oil
Cut the bamboo shoots into 8 mm dices. Cut the takana pickles into 1 cm wide strips. Spread out the leaves and cut into 1 cm squares.
Heat 1 tbsp of vegetable oil in a frying pan placed over medium heat. Stir-fry and crumble the ground pork. Add the leek and bamboo shoots and stir-fry for about a minute. Add the takana and briefly stir-fry. Add [A] and stir-fry until evenly coated. Sprinkle sesame seeds and stir.
