Sweet and Savory Simmered Potatoes
The Japanese love the sweet and savory taste of sugar and soy sauce. It's used to flavor a wide variety of dishes.

Ingredients (Serves 2-3)
- 3 potatoes (large) (500 g)
- 200 ml dashi
- 2 tbsp sugar
- 2 tbsp soy sauce
Cut each potato into quarters and place in water for 10 min, then strain.
Place the potato wedges and dashi in a pot and heat over medium heat. When it comes to a simmer, add 2 tbsp of sugar and stir to dissolve, then cover and simmer over low heat for 5-6 min.
Stir in the soy sauce, then cover and simmer over low heat for an additional 6-8 min, or until the potatoes become tender.
