Sweet and Savory Simmered Gobo Burdock Root and Ground Chicken

Ingredients (Serves 2)

  • 1 gobo burdock root (200 g)
  • 100 g ground chicken
  • [A]

    • 2 tbsp mirin
    • 1/2 tbsp sugar
    • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 tbsp sake
  • 100 ml water



Place the blade of your knife against the gobo burdock root, tilted (with the blade pointed toward the hand holding the gobo burdock root in place), and scrape the skin off of the gobo burdock root. Cut it diagonally into slices 3-4 mm thick, then place the slices in water for about 3 min and strain.


Oil a frying pan with vegetable oil and preheat over medium heat, then add the ground chicken, breaking it up as you stir-fry it. When it forms small pieces that do not stick together, add the gobo burdock root and continue to stir-fry.


When the gobo burdock root becomes translucent, add the sake and water. When it comes to a simmer, add the ingredients for [A] in the order listed, and simmer until all of the liquid is cooked off, stirring constantly.
