Soymilk Soup with Broccoli and Asparagus

Ingredients (Serves 2)
- 2 spears green asparagus
- 1/2 head broccoli
- 200 ml soymilk (processed)
- 200 ml water
- 1 small piece blue cheese
- Black pepper (coarsely ground), to taste
Cut off the tough root end of the asparagus and use a peeler to peel off the tough skin at the base (about 3 cm at the base end), then cut into pieces 1 cm wide. Break the broccoli into small florets.
In a pot, combine the soymilk, water, asparagus, and broccoli and heat over medium heat. When it comes to a gentle simmer, reduce heat, add the black pepper to taste, and simmer for about 3 min. Serve with broken pieces of blue cheese added, allowing the cheese to melt into the soup as you eat it.
If you heat soymilk until it reaches a full boil, it will separate, so make sure to keep the heat low enough that it only just bubbles as it simmers.
