Ingredients (Serves 2)

  • 2 cucumbers
  • Salt, as needed
  • 50 g processed cheese
  • [A]

    • 2 tbsp mayonnaise
    • 1 tsp curry powder
    • 1 tsp miso
  • A pinch of pepper

Directions

Place the cucumbers on a cutting board, sprinkle with 2 teaspoons of salt and roll back and forth with your hands to draw out excess moisture. Rinse and pat dry with a paper towel.

Using a wooden spatula, press down on the cucumbers to split them. Cut into 3 equal lengths and tear into bite-size pieces.

Cut the cheese into 5 mm dices. Mix [A] in a bowl, add the cucumbers and cheese and season with salt and pepper.
