Salad Sushi with Curly Green Lettuce and Smoked Salmon
Sushi rice is usually made with vinegar but this recipe uses lemon instead. Enjoy it like a salad!

Ingredients (Serves 2)
- 300 g rice (freshly cooked)
- 1 1/2 tbsp lemon juice
- 1 1/2 tbsp olive oil
- 1/3 tsp salt
- 4 slices smoked salmon (40 g)
- 2 leaves curly green lettuce (30 g)
- 1/6 onion
- A pinch of salt
In a small bowl, combine the ingredients for the [dressing] and mix thoroughly. Place the cooked rice in a large bowl and pour the [dressing] over top. Mix it in using a quick cutting motion with a spatula, and let cool.
Thinly slice the onion using a mandolin slicer or other means. Place in a bowl, sprinkle with salt, briefly mix, then let sit for about 5 min. Once the onion has softened, massage the salt in, rinse the onion, then squeeze out the excess water. Tear the curly green lettuce leaves into easy-to-eat pieces. Cut the smoked salmon into pieces 2-3 cm wide.
Rubbing the onion with salt can reduce the "sharpness" of its flavor, and helps the onion to mix well with the rice.
Add the sliced onion to the rice and mix well using a spatula. Once the onion is evenly distributed within the rice, add the smoked salmon and curly lettuce leaves, then stir gently.
