Ingredients

  • 200 ml dashi
  • 50 ml mirin
  • 50 ml soy sauce
  • 2 g bonito flakes
  • 60 g white sesame paste
  • A pinch of Chinese chili oil
  • A pinch of garlic (grated)

Pour the dashi, mirin and soy sauce in a heat-resistant jar, add the bonito flakes and microwave (600 W) for about a minute. Line a strainer with a paper towel and strain. The result is oi-gatsuo, a concentrated dashi-based sauce with additional bonito flakes to enhance the flavor. Add the sesame paste, chili oil and garlic, and mix thoroughly.

Tips

Storage: If stored in an airtight container, will keep in the fridge for about 3 days.
