Ingredients (Serves 2)
- 1 carrot (150 g )
- 30 g mesclun (mixed young salad greens)
- 3-4 tbsp French dressingNote
Use store-bought or make your own by combining 65-70 ml vinegar, 130-140 ml olive oil (or vegetable oil), 1 tsp of salt and pepper as needed.
- 2 tbsp grated cheese
- A pinch of salt
- A pinch of pepper
Use a vegetable peeler to peel the carrot into long thin strips.
Place the carrot ribbons and mesclun in a bowl. Sprinkle with French dressing and season with salt and pepper. Mix, and plate up. Sprinkle with grated cheese.
