Traditional Japanese cuisine is rich in delicious vegetarian dishes. A typical meal features rice, miso soup full of seaweed and vegetables, and nimono – stewed vegetables like potatoes and carrots. Add soy-based side dishes like tofu or natto, and you have a full-course vegetarian dinner!
When we cook Japanese food, we often use bonito for making dashi broth. Instead, you can substitute kombu kelp and dried mushrooms to make great, fish-free dashi.
