The Heart of Ancient Kyoto

The heat is intense in the Ohara district of Kyoto. Venetia makes a liquid herbal soap from soapwort to wash her well-loved lace. Her lifestyle is gentle to both nature and the things she owns. She then dons a favorite kimono to visit Tokunosuke Matsumura in his old Kyoto townhouse. Matsumura's townhouse, with its traditional devices for appreciating every season, is redolent of the spirit of the ancient capital. She also drops by at a teahouse on the approach to the Imamiya Jinja shrine, which dates back to Heian period, and partake of the charcoal-roasted aburimochi pounded rice cakes in a sweet miso paste. Her spirit is soothed by the never-changing flavor.

Recipe Burdock Chips

[Ingredients]
Burdock Root 2 (medium size)
Sugar 1 Tbsp.
Cooking Wine 3 Tbsp.
Pinch of Red Pepper Spices
Soy Sauce 3 Tbsp.
Sesame Seeds 1 Tbsp.
Water 3 Tbsp.
Vegetable Oil appropriate amount

1) Peel burdock skin, cut into small sticks and place it in water to remove scum.
2) Add soy sauce, wine, sugar to the burdock, boil for 30 min.
3) Fry the burdock in oil, then sprinkle sesame seeds and red pepper on top.
