Steamed Sea Bream(encore)

Ingredients (Serves 4)
* 2 sea bream fillets
* 1 slice bacon
* a little sake and salt
* 1 Japanese leek
* 1knob ginger

1. Cut the sea bream in half and make a crisscross cut on the surface. Season with the sake and salt.

2. Cut the bacon into 4 pieces.

3. Slice the leek diagonally, soak it in water and drain well. Shred the ginger finely.

4. Place half the leek and ginger on each serving plate. Use the rest for garnishing.

5. Add the sea bream and put the bacon on top.

6. Put it in a steaming basket and steam for 5 mintues.
