Tokyo Ingredients Taking on the World!

Some great new crops and animal breeds are coming out of Tokyo, and people are working hard to raise their profile ahead of the 2020 Olympics. Today we’ll discover some delicious made-in-Tokyo food products!

Highlights

1) Tokyo Udo Grown underground to preserve its pure white color, Tokyo Udo is known for a clean taste and juicy texture.

2) Udo sushi Tachikawa udo pickled in sweet vinegar, and placed on top of rice and alongside saba, tai and other delicious fish.

3) TOKYO X pork steak This breed of pork is famed for its marbled fat, which gives it a soft, savory juiciness.

4) Tokyo cocoa On Hahajima, one of the Ogasawara Islands that belong to Tokyo, cocoa is being grown, and used to create lovely "made-in-Tokyo" chocolate. This special brand is expected to go on sale in 2018.

Reason for coming to Japan:
I was born in Kamakura, and basically grew up there, with short stints in between in Texas, Korea and Tachikawa. I moved to the U.S as a young adult to attend University. As an avid surfer, I lived in San Francisco, California for over twenty years, but I realized one day that I was no longer able to comfortably ride the large waves that arrive there every winter. I decided to come back to my hometown of Kamakura to ride the easy and mellow waves. I met my wife, also from Kamakura so I am still here. I love Kamakura.
